Try this delicious, simple and healthy chicken recipe that is packed with nutrients to support skin health.

Ingredients

5-6-chicken breasts (120 g/person)
1 orange
Butter
Olive oil
Mineral salt (eg. celtic salt)
Black pepper
Turmeric
Paprika powder
Fresh parsley (frozen fresh is fine)

Serving suggestion:

1 carrot (fresh or oven roasted)
Oven roasted zucchini 
Steamed or boiled broccoli

Instructions

  • Put the oven on 175 Degrees Celsius.
  • Fry the breast in butter on both sides in a stainless steel, or cast iron, frying pan.
  • Sprinkle olive oil on top of the chicken.
  • Season with salt, pepper, and generously with turmeric and paprika.
  • Add a handful of parsley.
  • Squeeze orange juice into a cup and pour onto the chicken.
  • Turn the chicken breasts a few times to cover them in the sauce and spices.
  • Turn the heat down to low and let simmer under a lid.

Vegetable side

  • Rinse and cut the zucchini into 2-3 cm thick slices and put in an oven dish.
  • Put in an oven dish and sprinkle olive oil, salt and black pepper on top.
  • Put in the oven for about 15 minutes or until soft.
  • Peel the carrot and eat it as it is, grate it or cut it in “fingers” and put in the oven with the squash.
  • Cut the broccoli into bouquets and the stem into “coins” (i always peel off the thick skin layer of the stem before cutting it) and boil or steam for a few minutes until al dénte

Why is this dish good for your skin?

  • The chicken breasts contain a lot of protein that provides the building blocks (amino acids) for proteins in your skin, for example collagen, keratin and elastin.
  • The olive oil contains mono-unsaturated acids that help keep the skin soft and hydrated.
  • The turmeric has powerful anti-inflammatory effects and the black pepper increases the absorption of turmeric in the gut.
  • The carrot contains beta-carotene that is a strong antioxidant, that protect the skin from damage caused by UV-radiation from the sun. Beta-carotene is also a precursor of vitamin A, which is very important for skin health. 
  • The broccoli contains vitamin C (steam or boil gently to preserve vitamin C!), fibre, phytonutrients and sulphur – all of which are good for skin health.
