Are you, like me, a bread lover, but at the same time, you want to cut down on your intake of grains and wheat? Then this healthy recipe is for you! 

Let me introduce you to my delicious and protein rich cottage cheese bread! 

The thing is that the format of a sandwich with topping, is such a clever, practical and easy way of eating. And it so tasty! It can also be very healthy, depending on what type of bread you use and what you use as a topping. 

A white toast with marmalade can cause a sharp rise in blood sugar. To me, that should be called a treat, not a breakfast! However, if you use a nutbread (link to recipe) or this delicious cottage cheese bread, and add some avocado, tomatoes and sprouts, for example, as topping, then you have a healthy breakfast (or snack) that help keep your blood sugar balanced. 

If you want to cut out on grains completely, feel free to try to replace the oats with more seeds! Pumpkin seeds are high in both magnesium and zinc, so that may be a good swap.

Ingredients

  • 2 dl sunflower seeds
  • 2 dl pumpkin seeds
  • 1 dl oats
  • 2 tsp psyllium seeds
  • 4 eggs
  • 250 g cottage cheese
  • 1 tsp baking powder
  • pinch of salt

Instructions

  1. Heat up the oven to 200 C or 390 F.
  2. Mix together the sunflower seeds, pumpkin seeds, oats and psyllium seeds.
  3. Crack the eggs into a bowl and mix with cottage cheese, baking powder and salt.
  4. Stir in the seed and oat mixture and blend until all mixed together. 
  5. Put buns, the size you want, on an oven tray. 
  6. Bake in the oven for 20 minutes. Keep an eye on the buns as ovens are different!
  7. Take out when they are golden in color. 
  8. Enjoy with some avocado, tomatoes and sprouts or butter and cheese!
